Craftsmanship: We like to do things the old-fashioned way: all-natural cuisine. We prepare everything from scratch. This means we employ more chefs and bakers because we do things by hand, rather than buying prepared or frozen ingredients. We also use organic ingredients whenever possible -- even our eggs are organic. Why do we do this? Well that’s the easy part, because it tastes better and we pride ourselves on serving the best food we can. Plus we sleep better at night knowing we do! We hand-make everything ourselves, from our stocks to our pastries. We support farmers, cheese makers and other professionals with the same philosophy. Entertaining is a craft.
Simplicity: We believe in allowing beautiful ingredients to speak for themselves. Less is more. The same is true with design.

Experience: In business for almost 30 years, our founder has over 40 years of experience in the industry. Our executive chef has been with us for more than a decade, and the average stay of our principals is eight years.
Great Service: It is what puts you at ease, and allows you to spoil yourself. Your event designer, supervisor, server and chef all have the same mission: to serve you.
Culinary Responsibility: Sustainability, sound animal husbandry, no antibiotics or growth hormones, handcrafted, organic, artisan and farmstead are Waters’ watchwords. We buy from and support people of like mind.
Comprehensiveness: An event should be complete, harmonious, and appropriate. All the components (cuisine, service, production, décor and entertainment) should work seamlessly together and exist for a reason.
Regional and Seasonal Ingredients: Flying strawberries from Chile to San Diego in December somehow just doesn’t seem right. Letting the season dictate the menu by using the rich bounty that avails itself to us locally does seem right.
